Zwart Black Star (ABV 8%) is one of De Proef Brouwerij's "Brewmaster's Collaboration" series -- this time, Dirk Naudts partnered with Jerrod Johnson and Ben Smith of Surly Brewing Co. in Minneapolis to create a mahogany-colored Old Ale brewed with star anise, aged on sassafras wood with Brettanomyces, and intended to grow and evolve as it ages.

The complex malt bill (Dingemans 2-Row, Aromatic, Biscuit, Munich, Special B) and the addition of star anise yields notes of rich chocolate and dark fruit, followed by more subtle notes of black licorice. The wood aging adds a deeply rich, herbal component all finished with the funky signature of wild yeast.

Brewed and presented in memoriam and tribute to the late, great, ever-evolving David Bowie.

In 1996, Dirk Naudts, a highly regarded brewing engineer and professor, with his wife Saskia Waerniers, created De Proef Brouwerij (the Proof Brewery) in the village of Lochristi, Belgium. The brewery blends modern equipment and technologies with traditional brewing methods, operating predominantly as a rental brewery to develop and produce beers for third parties who do not have their own facilities, or who want to produce experimental small batch beers. Their focus lies exclusively on recipe/product development (never copying existing beers) and beer production.

The Surly Brewing Company is a Minnesota-based craft brewery noted for well-reviewed beers and primarily canning, rather than bottling. Founder Omar Ansari caught the home brewing bug in the early '00s, when the quest to find a quality craft beer in Minnesota "really was enough to make a person surly" – so, in 2005 Surly Brewing Co. began.

Surly's current head brewers Ben Smith and Jerrod Johnson continue the relentless pursuit of craft beer perfection, pushing boundaries and refusing to brew to style (except for when they do!). The brewery now has capacity to serve nine states and one province.
