De Proef Brouwerij's K-O (Knock Out) (ABV 10%) is the latest invention of Dirk Naudts, one of Belgium's leading brewmasters.

It pours a hazy warm gold with creamy, lasting foam and thick lacing. The aroma is complex -- full of orchard fruits (apple, peach, nectarine) and spicy Belgian yeast, with notes of clove and coriander.

Tastes of apples and honey, with spice and caramel malt, plus just enough hoppy bite to counter the fruit. Prickly carbonation and a dry finish add to its drinkability -- but please, watch out for K-O's sucker punch. It seems so light, so blonde, so harmless. Floats like a butterfly, stings like a bee!

Ratebeer.com rating: 94 (out of 100); 11.2 oz capped bottle.

In 1996, Dirk Naudts, a highly regarded brewing engineer and professor, with his wife Saskia Waerniers, created De Proef Brouwerij (the Proof Brewery) in the village of Lochristi, Belgium. The brewery blends modern equipment and technologies with traditional brewing methods, operating predominantly as a rental brewery to develop and produce beers for third parties who do not have their own facilities, or who want to produce experimental small batch beers. Their focus lies exclusively on recipe/product development (never copying existing beers) and beer production
