Double Saison (ABV 8.0%) from Brasserie de la Senne is made in collaboration with Brasserie du Mont Salève. It's made with rustic cereals and noble hops, and refermented in the bottle with de la Senne's own Brettanomyces yeast, which gives it a funky side.

Pouring hazy yellow with a large, frothy white head, its aroma offers fresh citric, fruity, and floral notes: lemongrass, orange blossom, tropical fruits, and pine, plus light leather and funk from the yeast.

With lively carbonation and a creamy mouthfeel, taste follows the nose. The tartness of white grapes and green apples is balanced by crisp, malty sweetness, spicy white pepper, and moderate bitterness. Refreshing and drinkable, with the alcohol well-hidden.

La Brasserie de la Senne or De Zennebrouwerij is named for the river Zenne which flows through Brussels, where the brewery is located. Founded by Bernard Leboucq and Yvan De Baets, the brewery has a reputation for brewing fine ales and "frustratingly rare blends" that often include lambic from the nearby Cantillon Brewery.

Leboucq and De Baets do everything themselves, using traditional methods. The beers are neither filtered nor pasteurized, and no additives are used. Their philosophy is to brew beers that are characterful, but not necessarily strong. With an annual production of 1,800 hectoliters, the demand for the beers currently exceeds production capacity.
